Taggiasca Olives from the Ligurian Riviera are certainly among the most famous table olives in the world, to be enjoyed simply. What makes them exceptional is not only the variety of the olive, but also the microclimate in which they are grown.

The La Rocca farm offers Taggiasca olives using only olives from olive groves located in the Gulf of Diana. The lands with uniquely Taggiasca olive trees are all terraced, scattered in small plots located near the villages of the valley. Our pride lies in the fact that we are steadily acquiring over the years several plots with uncultivated olive trees and placing them back into income by enhancing the land and olive production. Our olives are harvested by hand and are then separated from the leaves and divided by size and then placed to mature in brine (a solution of water and salt) for at least six months. Once the ripening period has passed, they are checked for quality; they are selected by hand, keeping the finest ones and discarding those that are aesthetically ruined, and finally packaged in brine.
